John’s coronation chicken salad

I chose to make this because… both mine and Emma’s kids love it and it has become one of our family favourites.

Secret ingredient: Apricot jam

1 In a bowl mix 425ml of mayonnaise, 150ml of natural yogurt, 3 tbsp of korma curry paste and 3 tbsp of apricot jam.

2 Cut the meat from two cooked and cooled chickens into bite-sized pieces, and incorporate into the mayonnaise mixture.

3 Finally, stir in 200g of small, seedless green grapes and serve
