I chose to make these because… they look really impressive, but are so easy to make.Â
Secret ingredient: Edible glitter
1. Preheat the oven to 100°C/80°C fan/gas mark 1/ 4. Whisk 8 egg whites until stiff then whisk 450g of caster sugar, 3 tbsp at a time, into the egg whites. Add 1 tsp white wine vinegar.
2. Divide the mix into 3 parts. Add 1/ 2 tsp of blue food colour to the first, purée 50g of strawberries and fold into the second with 1/ 2 tsp of red food colour. To the third, add 1/ 2 tsp of edible glitter.
3. Line 3 large baking sheets with baking paper and spoon on dollops of the mixture, well spaced out. Bake for 2 hours, then leave to cool. Serve sprinkled with edible glitter.
